What a grill house is, and what to order

At a grill house the fire does the cooking: at Madero the meat, the seafood and even the vegetables go over a brick-built grill fired with charcoal and wood, in full view of the dining room. Each cut is listed with its weight, arrives sliced on the house board, and the big ones are made for sharing. A simple way to order:

  • To start, one or two dishes in the middle of the table: chargrilled provoleta (aged provolone), the signature empanadas or the chargrilled octopus.
  • For something tender, the fillet (lomo fino, 280 to 300 g); for a classic, the sirloin (bife de chorizo, 350 to 400 g).
  • To share, the chuletón, a bone-in rib steak from mature cows, aged for 40 to 60 days (800 g to 1.2 kg), or the tomahawk, a rib steak on its whole 40 cm bone (1.0 to 1.5 kg).
  • The large bone-in cuts (both chuletones, the tomahawk and the T-bone) come with a side of your choice; with the rest, order sides for the table: smoked mashed potato, triple-cooked chips, ember-roasted potatoes or sautéed seasonal mushrooms.
